Buñuelos (fried cheese puffs)

Ingredients:
(serves about 15 pieces)

(A)
1 lb. Puerto Rican white cheese

(B)
1 1/2 cups cornstarch
2 eggs, beaten
2 tablespoons brown sugar
1/2 teaspoon salt

Procedure:

Grind the cheese or use small curd cottage cheese. Mix the cheese thoroughly with the ingredients in (B).

Roll into balls about the size of golf balls. Fry in medium-hot vegetable oil for about ten minutes. Increase temperature and fry until they turn golden brown.

Remove and place on absorbent paper. Serve warm.
