Guanime de Plátano
(Plantain guanimes)

Ingredients:
(serves 6 or more)

(NOTE: You can now find plantain meal at many Latin grocers. You can substitute 2 1/2 cups plantain meal for the three green plantains.)
3 green plantains
1/2 cup coconut milk
3/4 cup sugar
1 teaspoon salt
Plantain leaves for wrapping (preferably) or substitute for wax paper wrapping thread

Note: As you may see from the ingredients, this is a calorie-laden recipe!

Procedure:

1. Remove plantain skins.
2. Soak plantains in briny water for thirty minutes.
3. Remove from water, rinse and dry the plantains.
4. Grate the plantains into a paste.
5. Blend in the coconut milk, salt and sugar.
6. Form each guanime in sausage shape, about 5 inches long and no more than one inch thick.
7. Place on a piece of plantain leaf, folding the leaf at the edges, and wrap with thread.
8. Simmer in chicken broth (preferred) or water for around thirty minutes. 9. Serve warm.
