Maduros - amarillos fritos
(fried ripe plantains)

Serves four/six

Ingredients:
Two ripe or very ripe plantains
(the skin of the plantain should be spotted with brownish black)
frying oil

Procedure:
1. Peel the plantain. Cut at an angle, making slices about 3/4" thick.
2. Heat approximately 1/4" oil in a medium skillet over medium heat.
3. Brown plantain in oil, approximately 2 minutes a side, or until both sides are brownish.
4. When browned, remove from skillet and place on a paper towel covered plate to drain the excess oil off.
5. Serve hot as a side dish for any rice dish.
