Garlic Sauce (also called Garlic Butter)

Garlic sauce is an excellent condiment for steak, fish, chops, and chicken. Try it also on toasted French bread.

Makes about 1/3 cup

Ingredients:
(A)
2 0z (4 tablespoons) butter - Use margarine, if you must, but true flavor comes from the calorie-laden real butter
salt and pepper to taste - go lightly on the salt if you wish to bring out the flavor in the remaining ingredients.
(B)
2 to 3 cloves garlic
1/3 teaspoon ground oregano
1/3 teaspoon chopped parsley
1/3 teaspoon chopped cilantro

Procedure:
Peel the garlic cloves. If desired, boil for two to three minutes. Mash into a pulp. Mix with the remaining ingredients included in (B).

Use a fork or wooden spoon to soften the butter into a cream. Slowly merge in the mixture prepared above. Stir just enough to ensure an even spread throughout.

May be used at once or refrigerated in a small bowl. For fancier appearance, refrigerate in small cookie molds to serve individually in each dinner plate.
