Sofrito
Puerto Rican seasoning

The seasoning combination sofrito is found in many cultures. In Puerto Rico, it is an essential part of many of our favorite dishes. Add it to your favorite soup or sauce to add extra flavor. It is also great when tossed with cooked rice or steamed shellfish.

Makes about 1 cup

Ingredients:
(A)
1/4 cup Onion, diced
1/4 cup Green bell pepper, diced
1/4 cup Tomatoes, diced
2 cloves Garlic, minced
1 1/2 Tablespoons Fresh herbs (cilantro or basil work well). Use culantro (recao) for Puerto Rican flavor.
(B)
1 1/2 Tablespoons Olive oil
1 teaspoon annatto oil (achiote) for yellowish coloring

Place all ingredients included in (A) in a blender and pulse until a coarse sauce forms (similar to salsa).

Heat the ingredients in (B) in a heavy skillet over medium heat. Saute the sauce for 5 minutes.

Use as required for the recipe you may be cooking.

Note: Many cooks prefer to prepare larger amounts of the ingredients included in (A), and freeze them in small containers which are then thawed as needed. They will keep for one to two months in the freezer. Use within two or three days after thawing in the refrigerator. Do not refreeze.
