Ingredients:
¥ Two cups white rice (raw, uncooked, white rice)
¥ two and a half cups of tap water
¥ Two tablespoonfuls of cooking oil (or margarine)
¥ A pinch of salt

Preparation:
¥ White rice is a basic element in the kitchen of a majority of the countries throughout the world. In fact, millions of people survive on a diet that is chiefly white rice and very little else.
¥ There are many different styles of cooking white rice. This recipe follows the Puerto Rican basic procedures. Doubtlessly, you'll find many other versions. Test them all! The best one for you and your tablemates is the one you enjoy most.

White rice grows while cooking, to slightly over twice its uncooked size. Thus, you need a pot, with lid, that can hold slightly more than twice the volume of the ingredients that you will have at the beginning. However, you do not want to use a pot that is too large, because the rice will not cook properly in it.

Rinse the rice, if you must! It isn't really necessary, but many cooks feel unconfortable unless they do.

¥ Pour the rice, water and salt in the pot.
¥ Bring the water to a boil over medium-high heat in the uncovered pot, reducing to medium as soon as the water is warm.
¥ When the excess water has escaped as steam, it's time to fold the rice over with a ladle. The idea is to use three or four scoops to bring the rice from the bottom of the pot to the surface, and viceversa.
¥ Set the lowest possible heat setting on your range.
¥ Cover the rice and allow to cook for another ten minutes or so.
¥ Serve. Enjoy!
¥ Unused portions may be kept in the refrigerator and warmed later.
