Mabí (non-alcoholic)


Mabi is somewhat like a root beer. It is a refreshing, non-alcoholic drink that is just perfect for tropical summers. For best results, you need to have some fermented mabi to add as an ingredient to your own brew. After fermenting, it keeps for several days in the refrigerator.

Ingredients
2 1/2 cups water
1 oz Mabi bark
2 cups warm water
3/4 cup brown sugar
1 1/4 cups mabi

Boil the mabi bark in water until the wark turns golden. Sieve. Stir until it foams.

Add the remaining ingredients. Stir thoroughly. Pour into individual bottles. Cover with "caps" made from paper shaped into cones.

When the mabi ferments, it foams through the bottle opening. For faster results, let stand in the sun for a while. Keep away from drafts.
